Ingredients

The potatoes

  • 5–6 pieces russet potatoes
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

The garlic herb butter

  • 3 tablespoons unsalted butter
  • 3 cloves fresh garlic
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 2–3 tablespoons parmesan cheese (optional)
  • to garnish fresh parsley

Instructions

  1. Preheat the oven to 425°F.
  2. Rinse and pat dry the potatoes.
  3. Slice the potatoes thinly, leaving about ½ inch at the bottom.
  4. Place the potatoes in a baking dish and brush with olive oil, seasoning with salt and pepper.
  5. Mix melted butter, minced garlic, rosemary, and thyme in a bowl.
  6. Brush the butter mixture over each potato, ensuring it gets into the crevices.
  7. Bake uncovered for 40-50 minutes until fork tender.
  8. Garnish with grated parmesan and parsley before serving.
