Instructions
- Preheat the oven to 425°F.
- Rinse and pat dry the potatoes.
- Slice the potatoes thinly, leaving about ½ inch at the bottom.
- Place the potatoes in a baking dish and brush with olive oil, seasoning with salt and pepper.
- Mix melted butter, minced garlic, rosemary, and thyme in a bowl.
- Brush the butter mixture over each potato, ensuring it gets into the crevices.
- Bake uncovered for 40-50 minutes until fork tender.
- Garnish with grated parmesan and parsley before serving.
