Hasselback Potatoes

Ingredients

The potatoes

  • 6 medium Idaho or russet potatoes

The flavoring

  • 3 tablespoons unsalted butter
  • 3 tablespoons extra-virgin olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • ¼ teaspoon ground black pepper
  • 2 teaspoons smoked paprika (optional)
  • 3 tablespoons finely chopped fresh chives or parsley

Instructions

  1. Preheat the oven to 450°F and prepare a baking sheet.
  2. Melt the butter with olive oil and garlic in a saucepan over medium-high heat.
  3. Slice the potatoes thinly, leaving the bottom intact by using wooden spoons as guides.
  4. Brush the melted butter mixture between the slices and over the top of the potatoes.
  5. Bake the potatoes for 45 to 55 minutes until crispy and tender.
  6. Season with additional salt and fresh herbs before serving.
