Ingredients

The potatoes

  • 6 pieces sweet potatoes (6-8 ounces each)

The coating

  • ¼ cup olive oil
  • ¼ cup butter (melted)
  • to taste salt
  • to taste black pepper
  • as needed cooking spray

The toppings

  • as desired fresh herbs, garlic butter, brown sugar, marshmallows, or pecans

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with foil and cooking spray.
  2. Place a sweet potato on a cutting board between two chopsticks and slice it into ¼ inch thick slices.
  3. Repeat the slicing process for all sweet potatoes and place them on the baking sheet.
  4. In a bowl, mix together olive oil, melted butter, salt, and pepper.
  5. Brush the mixture over the sweet potatoes, ensuring some gets between the slices.
  6. Bake the sweet potatoes for 50-60 minutes until they are tender and browned.
  7. Add your choice of toppings and serve.
