Instructions
- Preheat the oven to 400°F and prepare a baking sheet with foil and cooking spray.
- Place a sweet potato on a cutting board between two chopsticks and slice it into ¼ inch thick slices.
- Repeat the slicing process for all sweet potatoes and place them on the baking sheet.
- In a bowl, mix together olive oil, melted butter, salt, and pepper.
- Brush the mixture over the sweet potatoes, ensuring some gets between the slices.
- Bake the sweet potatoes for 50-60 minutes until they are tender and browned.
- Add your choice of toppings and serve.
