Hasselback Sweet Potatoes

Ingredients

The potatoes

  • 4 medium sweet potatoes

The seasoning

  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper

The sauce

  • ¼ cup plain Greek yogurt
  • 2 tablespoons adobo sauce
  • ½ lime juice
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Carefully cut each sweet potato into 1/8" slices, leaving about 1/4" intact at the bottom.
  3. In a small bowl, mix the olive oil, kosher salt, garlic powder, and black pepper, then rub this mixture all over the potatoes.
  4. Place the potatoes cut side up on a baking sheet and bake for 50-60 minutes until tender and crispy.
  5. While the potatoes are baking, whisk together the Greek yogurt, adobo sauce, lime juice, salt, and pepper.
  6. Once the potatoes are done, drizzle the sauce over them and serve immediately.
