Hasselback Sweet Potatoes

The sauce

Instructions
- Preheat the oven to 400°F.
- Carefully cut each sweet potato into 1/8" slices, leaving about 1/4" intact at the bottom.
- In a small bowl, mix the olive oil, kosher salt, garlic powder, and black pepper, then rub this mixture all over the potatoes.
- Place the potatoes cut side up on a baking sheet and bake for 50-60 minutes until tender and crispy.
- While the potatoes are baking, whisk together the Greek yogurt, adobo sauce, lime juice, salt, and pepper.
- Once the potatoes are done, drizzle the sauce over them and serve immediately.
