Ingredients

The potatoes

  • 3 pounds new potatoes
  • to taste Salt
  • to taste Pepper

The garlic butter mixture

  • 6 tablespoons unsalted butter
  • 6 cloves garlic
  • 2 teaspoons fresh thyme
  • 1 teaspoon creole seasoning
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat the oven to 200C/400F.
  2. Wash and scrub the potatoes, then pat them dry and remove any blemishes.
  3. Place each potato between two wooden spoons or chopsticks to guide your cuts.
  4. Slice the potatoes about 1/8-inch to 1/4-inch apart without cutting all the way through.
  5. Season the potatoes with salt and pepper in a large bowl or pan.
  6. In a small pan over medium-low heat, melt the butter and add minced garlic, thyme, and creole seasoning, stirring for about 30 seconds.
  7. Brush each potato with the garlic butter mixture using a pastry brush.
  8. Place the potatoes in a cast iron skillet or baking dish.
  9. Bake for 30-40 minutes, basting the potatoes halfway through.
  10. After 30 minutes, check if the layers are separating, baste again, and return to the oven for another 30 minutes or until cooked through and browned.
  11. Garnish with thyme and parsley if desired.
