Instructions
- Preheat the oven to 200C/400F.
- Wash and scrub the potatoes, then pat them dry and remove any blemishes.
- Place each potato between two wooden spoons or chopsticks to guide your cuts.
- Slice the potatoes about 1/8-inch to 1/4-inch apart without cutting all the way through.
- Season the potatoes with salt and pepper in a large bowl or pan.
- In a small pan over medium-low heat, melt the butter and add minced garlic, thyme, and creole seasoning, stirring for about 30 seconds.
- Brush each potato with the garlic butter mixture using a pastry brush.
- Place the potatoes in a cast iron skillet or baking dish.
- Bake for 30-40 minutes, basting the potatoes halfway through.
- After 30 minutes, check if the layers are separating, baste again, and return to the oven for another 30 minutes or until cooked through and browned.
- Garnish with thyme and parsley if desired.
