Healthier Tempeh Reuben

Ingredients

The sandwich

  • 8 ounces brown rice tempeh
  • ¼ cup low sodium soy sauce or tamari
  • to taste none black pepper
  • 1 tablespoon mustard seeds
  • 4 slices rye bread
  • 2 tablespoons organic butter
  • ¼ cup cashew cheese (optional)
  • 1 cup sauerkraut
  • 2 slices swiss cheese

Healthier 1000 Island Dressing

  • ¾ cup tahini
  • 1-2 tablespoons chili sauce
  • ½ none juice of a lemon
  • 1 tablespoon chopped pickle
  • 1 tablespoon pickle juice
  • 1 tablespoon chopped chives
  • to taste none kosher salt
  • to taste none pepper

Instructions

  1. Slice the tempeh into 4 thin pieces.
  2. Marinate the tempeh in a zip-top bag with soy sauce, black pepper, and mustard seeds for 30 minutes.
  3. Preheat the oven to 425°F.
  4. Heat oil in a skillet and pan-fry the tempeh until golden and crisp, about 3-5 minutes per side.
  5. Spread butter on each slice of bread and toast in the oven for 3-5 minutes.
  6. Spread cashew cheese on the bottom slices of bread, then layer with tempeh, sauerkraut, and swiss cheese.
  7. Melt the cheese in the oven for about 5 minutes.
  8. Prepare the dressing by whisking tahini, chili sauce, lemon juice, pickles, and pickle juice in a bowl. Add water until smooth.
  9. Spread dressing on the top slices of bread, assemble the sandwiches, and slice in half.
