Ingredients

The chicken and sauce

  • 1 pound boneless skinless chicken breast, cut into bite-sized chunks
  • ½ onion finely minced
  • 2 tablespoons butter
  • 3 cloves garlic, minced or grated
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons curry powder
  • 1-2 teaspoons Thai red curry paste
  • 2 tablespoons garam masala
  • ½-1 teaspoon turmeric
  • 1 teaspoon cayenne pepper
  • ¼ teaspoon salt
  • 1 6-ounce can tomato paste
  • 1 14-ounce can coconut milk
  • ½ cup Greek yogurt
  • ¼ cup half and half or heavy cream

For serving

  • to taste none cooked white rice
  • to taste none fresh homemade naan

Instructions

  1. Mix coconut milk, Greek yogurt, and cream in a bowl.
  2. Stir in tomato paste, garlic, ginger, and all spices until well combined.
  3. Grease the crockpot, then add minced onion to the bottom.
  4. Place chicken in the crockpot and pour the coconut milk mixture over it.
  5. Add butter on top and cover the crockpot.
  6. Cook on high for 4 hours or low for 6 to 8 hours.
  7. Stir occasionally if desired, then season with salt and pepper before serving.
  8. Serve over rice with naan.
