Instructions
- Make the chipotle hummus by pulsing chipotles in adobo in a food processor, then add hummus and blend until combined.
- Preheat the grill to medium-high heat and brush both sides of the bread with olive oil.
- Toast the bread on the grill for about 1 minute until grill marks appear.
- Toss the vegetables with olive oil and salt, then grill them until cooked (zucchini for about 3 minutes, others for 5-7 minutes).
- Assemble the sandwiches by spreading hummus on the bottom half of the rolls, adding grilled veggies, and topping with avocado if desired.
