Ingredients

Short-Cut Chipotle Hummus

  • 2 pieces chipotles in adobo
  • 8 ounces store-bought or homemade hummus
  • a pinch kosher salt

Veggie Sandwiches

  • 4 pieces Bread Rolls or Buns
  • 3 tablespoons olive oil
  • 1 piece zucchini, trimmed and cut into ¼-inch slices
  • ½ piece eggplant, trimmed and cut into ¼-inch slices
  • 1 piece red pepper, trimmed and cut into 1-inch slices
  • 2 pieces green onions
  • 1 piece avocado, sliced (optional)

Instructions

  1. Make the chipotle hummus by pulsing chipotles in adobo in a food processor, then add hummus and blend until combined.
  2. Preheat the grill to medium-high heat and brush both sides of the bread with olive oil.
  3. Toast the bread on the grill for about 1 minute until grill marks appear.
  4. Toss the vegetables with olive oil and salt, then grill them until cooked (zucchini for about 3 minutes, others for 5-7 minutes).
  5. Assemble the sandwiches by spreading hummus on the bottom half of the rolls, adding grilled veggies, and topping with avocado if desired.
