Ingredients

  • 2 slices whole grain bread
  • 3-4 tablespoons hummus
  • 3 pieces radishes, thinly sliced
  • ¼ medium cucumber, thinly sliced
  • 3-4 slices fresh mozzarella
  • ½ medium avocado, sliced
  • 1 pinch coarse salt
  • 1 pinch freshly ground black pepper
  • ¼ cup shredded carrots and red cabbage
  • ¼ cup baby spinach

Instructions

  1. Spread hummus on both slices of bread.
  2. On one slice, layer radish, cucumber, mozzarella, and avocado, seasoning with salt and pepper.
  3. Add shredded carrots, cabbage, and spinach on top.
  4. Cover with the second slice of bread.
