Ingredients

Thousand Island-Inspired Dressing

  • ½ cup vegan mayonnaise
  • 2 tablespoons finely chopped sweet onion
  • 2 tablespoons finely chopped dill pickle
  • 2 tablespoons ketchup
  • ½ teaspoon lemon juice
  • ¼ teaspoon white wine vinegar
  • to taste sea salt and ground black pepper

Veggie Crunch Sandwich

  • 1 medium hothouse tomato, sliced
  • to taste sea salt and ground black pepper
  • 4 slices marble rye bread
  • 2 tablespoons yellow mustard
  • 4 large leaves butter/Boston lettuce
  • 8-10 slices sweet onion
  • 4-5 pepperoncini peppers, stems removed and cut into strips
  • 4 tablespoons sauerkraut
  • 2 handfuls bean sprouts
  • 2 handfuls broccoli sprouts or alfalfa sprouts

Instructions

  1. Prepare the Thousand Island-inspired dressing by mixing vegan mayonnaise, sweet onion, chopped pickles, ketchup, lemon juice, and white wine vinegar in a bowl. Season with salt and pepper and set aside.
  2. Slice the hothouse tomato and season with salt and pepper, letting it sit for a few minutes.
  3. Lay out 2 slices of marble rye bread, spreading the Thousand Island dressing on one side and yellow mustard on the other.
  4. Place a leaf of butter/Boston lettuce on each slice of bread.
  5. Layer the seasoned tomato slices on the lettuce, followed by sweet onion slices and strips of pepperoncini.
  6. Add sauerkraut evenly on top, then layer one handful of bean sprouts followed by a handful of broccoli or alfalfa sprouts.
  7. Top with the second slice of bread (mustard side down) and repeat the layering for the second sandwich.
  8. Cut each sandwich in half and enjoy.
