Instructions
- Prepare the Thousand Island-inspired dressing by mixing vegan mayonnaise, sweet onion, chopped pickles, ketchup, lemon juice, and white wine vinegar in a bowl. Season with salt and pepper and set aside.
- Slice the hothouse tomato and season with salt and pepper, letting it sit for a few minutes.
- Lay out 2 slices of marble rye bread, spreading the Thousand Island dressing on one side and yellow mustard on the other.
- Place a leaf of butter/Boston lettuce on each slice of bread.
- Layer the seasoned tomato slices on the lettuce, followed by sweet onion slices and strips of pepperoncini.
- Add sauerkraut evenly on top, then layer one handful of bean sprouts followed by a handful of broccoli or alfalfa sprouts.
- Top with the second slice of bread (mustard side down) and repeat the layering for the second sandwich.
- Cut each sandwich in half and enjoy.
