Ingredients

Red Pepper Hummus

  • 1 15-ounce can garbanzo beans
  • 1 whole red bell pepper
  • 1 clove garlic
  • 1 whole lemon (juice)
  • 3 tablespoons tahini
  • to taste kosher salt

Sandwich

  • 1 loaf bread of choice
  • 2 whole Persian cucumbers
  • 1 whole heirloom tomato
  • ΒΌ whole red onion
  • 1 whole avocado
  • to taste banana peppers
  • to taste butter lettuce
  • to taste slices of cheese (Colby Jack)
  • to taste alfalfa sprouts

Instructions

  1. Boil the garbanzo beans until softened, about 15 minutes, and reserve some boiling liquid.
  2. Char the red bell pepper on the stove or in the oven, then steam and peel the skin.
  3. Blend the garbanzo beans, red pepper, garlic, tahini, lemon juice, and salt in a food processor until smooth, adding reserved liquid as needed.
  4. Toast the bread if desired, then spread hummus on both sides.
  5. Layer with lettuce, cheese, cucumber, tomato, avocado, onion, banana peppers, and alfalfa sprouts.
  6. Slice the sandwich and enjoy.
