Instructions
- Boil the garbanzo beans until softened, about 15 minutes, and reserve some boiling liquid.
- Char the red bell pepper on the stove or in the oven, then steam and peel the skin.
- Blend the garbanzo beans, red pepper, garlic, tahini, lemon juice, and salt in a food processor until smooth, adding reserved liquid as needed.
- Toast the bread if desired, then spread hummus on both sides.
- Layer with lettuce, cheese, cucumber, tomato, avocado, onion, banana peppers, and alfalfa sprouts.
- Slice the sandwich and enjoy.
