Ingredients

The salad

  • 6-7 pieces Radishes
  • 1 ¼ Cup Black Beans, cooked and drained
  • 1 piece Cucumber
  • 1 Cup Diced Pineapple
  • 1 handful Fresh Basil
  • 1 Head Lettuce

The dressing

  • 1 piece Avocado
  • ¼ Cup Buttermilk
  • 1 Tbsp Honey
  • 1 Tbsp Unfiltered Apple Cider Vinegar
  • Juice of One Lime
  • Splash Cholula/Tapatio Hot Sauce
  • to taste Salt
  • to taste Pepper

Instructions

  1. 1. Blend or whisk together the avocado, buttermilk, vinegar, lime, honey, hot sauce, salt, and pepper to make the dressing.
  2. 2. Thinly slice the radishes and cut them into fourths. Peel and halve the cucumber, scoop out the seeds, and dice it.
  3. 3. In a large bowl, combine the radish, cucumber, black beans, diced pineapple, and a pinch of salt and pepper. Add the fresh basil.
  4. 4. Decide whether to dress the veggie mix or keep the dressing on the side before serving in lettuce leaves.
