Superfood Crunch Salad

Ingredients

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • ¼ teaspoon fine grain sea salt
  • to taste freshly ground black pepper

Salad

  • 8-10 cups destemmed and shredded Lacinato kale
  • 1 pear, thinly sliced and chopped
  • ½ cup pomegranate arils
  • ¼ cup pepita seeds
  • 3-4 tablespoons large flake coconut
  • 1-2 tablespoons hemp hearts
  • 1-2 teaspoons black sesame seeds (optional)
  • to taste cinnamon

Instructions

  1. Whisk together the dressing ingredients in a medium bowl and adjust to taste.
  2. Remove stems from the kale leaves and chop the leaves into small pieces.
  3. Wash and spin dry the kale, then place it in a large salad bowl.
  4. Toss the kale with the dressing until well coated.
  5. Add the toppings, sprinkle with cinnamon, and serve immediately or let it marinate for a while.
