Ingredients

The salad

  • 12 oz kale, chopped
  • 2 tbsp olive oil
  • ½ tsp salt
  • 1 cup cooked quinoa
  • 1 cup shredded carrots, chopped finely
  • 15 oz can chickpeas, drained and rinsed
  • 1 cup sliced almonds
  • 1 cup pomegranate seeds
  • 1 cup golden raisins
  • 6 oz feta, crumbled
  • cup fresh dill, chopped

The dressing

  • ½ cup olive oil
  • ¼ cup honey
  • 1 lemon juice of
  • 1 tbsp dijon mustard
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder

Instructions

  1. In a large bowl, combine kale, olive oil, and salt, then massage the kale until slightly broken down.
  2. Add cooked quinoa, chopped carrots, chickpeas, almonds, pomegranate seeds, raisins, feta, and dill to the bowl.
  3. In a separate measuring cup, whisk together all dressing ingredients until well combined.
  4. Pour the dressing over the salad and toss to combine. Serve immediately.
