Winter Salad
Ingredients
The salad

raw sunflower seeds

balsamic vinegar

curly kale, finely chopped

brussels, ends cut off and shaved into small thin slices

apple, cored and sliced into small bite-sized pieces (honeycrisp is preferred)

pomegranate seeds
The dressing

balsamic vinegar

olive oil or avocado oil

maple syrup

dijon mustard

salt & pepper
Instructions
- 1. Heat a non-stick pan over medium-high heat and roast the sunflower seeds for 2-3 minutes until golden brown.
- 2. Add balsamic vinegar to the seeds and stir until it evaporates.
- 3. Stir in honey and cook for an additional 1-2 minutes, then remove from heat and let cool.
- 4. Chop the kale, brussels, and apple, and combine them in a bowl.
- 5. In a small bowl, mix all dressing ingredients together.
- 6. Add the dressing to the salad and toss well.
- 7. Top the salad with pomegranate seeds and the roasted sunflower seeds.
