Winter Salad

Ingredients

The salad

  • 1 cup raw sunflower seeds
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • 4 cups curly kale, finely chopped
  • 2 cups brussels, ends cut off and shaved into small thin slices
  • 1 apple, cored and sliced into small bite-sized pieces (honeycrisp is preferred)
  • ¾ cup pomegranate seeds

The dressing

  • 3 Tbsp balsamic vinegar
  • 3 Tbsp olive oil or avocado oil
  • 1 tsp maple syrup
  • 1 tsp dijon mustard
  • pinch salt & pepper

Instructions

  1. 1. Heat a non-stick pan over medium-high heat and roast the sunflower seeds for 2-3 minutes until golden brown.
  2. 2. Add balsamic vinegar to the seeds and stir until it evaporates.
  3. 3. Stir in honey and cook for an additional 1-2 minutes, then remove from heat and let cool.
  4. 4. Chop the kale, brussels, and apple, and combine them in a bowl.
  5. 5. In a small bowl, mix all dressing ingredients together.
  6. 6. Add the dressing to the salad and toss well.
  7. 7. Top the salad with pomegranate seeds and the roasted sunflower seeds.
