Ingredients

The salad

  • 2 bunches Tuscan kale, finely chopped
  • cups purple cabbage, finely chopped
  • ½ cup crumbled feta cheese
  • ½ cup green olives, finely chopped
  • ½ cup pickled onion, finely chopped
  • ½ cup pomegranate arils
  • ½ cup chopped walnuts

The dressing

  • cup olive oil
  • ½ tablespoon dried oregano
  • teaspoons salt
  • ¼ teaspoon pepper
  • 1 juice of one lemon lemon
  • 1 tablespoon red wine vinegar
  • 2 small cloves garlic, pressed

Instructions

  1. Whisk all dressing ingredients together and set aside.
  2. In a large bowl, combine chopped kale, cabbage, feta, olives, pickled onion, pomegranate arils, and walnuts.
  3. Drizzle the dressing over the salad and toss well.
  4. Serve and enjoy!
