Mediterranean Kale Salad

Ingredients

The salad

  • 4 cups chopped kale or other greens
  • 1 ½ cups cucumber, spiralized or diced
  • 1 cup grape or cherry tomatoes, quartered
  • ½ cup Kalamata olives
  • ½ cup crumbled feta cheese
  • to taste Pepperoncini and/or roasted red peppers
  • optional cooked tuna or chicken breast

The lemon dressing

  • 1 each lemon (zest and juice)
  • 1 tablespoon honey
  • ¼ cup extra virgin olive oil
  • 2 teaspoons dried oregano leaves
  • to taste coarse salt and ground black pepper

Instructions

  1. In a large bowl, combine kale, cucumber, tomatoes, olives, feta, and Pepperoncini or roasted red peppers.
  2. In a separate bowl, whisk together lemon zest and juice, honey, and olive oil.
  3. Add oregano and season with salt and pepper to taste.
  4. Toss the dressing with the salad gradually until well combined.
