Mediterranean Kale Salad
Ingredients
The salad

chopped kale or other greens

cucumber, spiralized or diced

Kalamata olives

crumbled feta cheese

Pepperoncini and/or roasted red peppers

cooked tuna or chicken breast
The lemon dressing

lemon (zest and juice)

honey

extra virgin olive oil

dried oregano leaves

coarse salt and ground black pepper
Instructions
- In a large bowl, combine kale, cucumber, tomatoes, olives, feta, and Pepperoncini or roasted red peppers.
- In a separate bowl, whisk together lemon zest and juice, honey, and olive oil.
- Add oregano and season with salt and pepper to taste.
- Toss the dressing with the salad gradually until well combined.
