Ingredients

The salad

  • 3 cups sliced cucumbers
  • 2 cups cherry tomatoes
  • ¼ cup red onion
  • 1 each green bell pepper
  • cup kalamata olives
  • ¼ cup fresh parsley
  • cup feta cheese

The dressing

  • 6 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • to taste salt and pepper
  • ¼ teaspoon dried oregano
  • ¼ teaspoon garlic powder

Instructions

  1. Whisk together the dressing ingredients in a small bowl.
  2. In a large bowl, combine the cucumbers, cherry tomatoes, red onion, green bell pepper, kalamata olives, and parsley.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. Sprinkle feta cheese over the salad and garnish with additional parsley if desired.
  5. Serve immediately.
