Ingredients

The salad

  • 8 ounces grape tomatoes
  • 8 ounces English cucumber
  • 1 ounce red onion
  • 1 ounce feta cheese
  • 15 Kalamata olives
  • 3 tablespoons extra virgin olive oil
  • to taste salt
  • to taste pepper

Optional variations

  • to taste chopped fresh mint
  • to taste parsley
  • to taste basil
  • to taste oregano
  • to taste sliced fennel
  • to taste minced garlic
  • to taste vinegar or lemon juice

Instructions

  1. Peel and cut the cucumber.
  2. Halve the tomatoes and Kalamata olives.
  3. Slice the red onion and crumble the feta cheese.
  4. Combine all ingredients in a bowl except for the olive oil.
  5. Refrigerate until ready to serve.
  6. Toss with olive oil and season with salt and pepper to taste.
  7. Try variations to keep it fresh.
  8. Store covered in the refrigerator for 2-3 days.
