Instructions
- Combine cucumbers, tomatoes, chickpeas, red onion, olives, and mint in a large bowl and toss gently.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper to create the dressing.
- Pour the dressing over the salad ingredients just before serving and add feta cheese if desired.
