Ingredients

The salad

  • 6 pieces Persian cucumbers, thinly sliced
  • 2 cups grape tomatoes, halved
  • 1 15-ounce can chickpeas, drained and rinsed
  • ½ small red onion, diced or thin sliced
  • ½ cup kalamata olives, pitted and sliced
  • 2 tablespoons fresh mint, minced

The dressing

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon fine salt
  • 1 pinch black pepper

Optional

  • cup feta cheese, crumbled

Instructions

  1. Combine cucumbers, tomatoes, chickpeas, red onion, olives, and mint in a large bowl and toss gently.
  2. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper to create the dressing.
  3. Pour the dressing over the salad ingredients just before serving and add feta cheese if desired.
