Greek Salad

The salad

kalamata olives, pitted and halved

chopped fresh mint, lightly packed
The dressing

Greek salad dressing
Instructions
- Sprinkle cucumbers and cherry tomatoes with salt and let sit for at least 15 minutes to draw out excess liquid.
- In a large bowl, combine red onion, red pepper, olives, feta, and fresh mint.
- Drain the excess liquid from the cucumbers and tomatoes, then add them to the bowl with the other ingredients.
- Gently mix all ingredients together.
- Add the Greek salad dressing and mix until everything is coated. Serve immediately.
