Ingredients

The salad

  • 3 cups sliced English cucumbers
  • 1 pint cherry tomatoes, halved
  • teaspoon salt
  • ½ large red onion, finely sliced
  • 1 large red pepper, diced
  • 1 cup kalamata olives, pitted and halved
  • ½ cup crumbled feta cheese
  • cup chopped fresh mint, lightly packed

The dressing

  • 3-4 tablespoons Greek salad dressing

Instructions

  1. Sprinkle cucumbers and cherry tomatoes with salt and let sit for at least 15 minutes to draw out excess liquid.
  2. In a large bowl, combine red onion, red pepper, olives, feta, and fresh mint.
  3. Drain the excess liquid from the cucumbers and tomatoes, then add them to the bowl with the other ingredients.
  4. Gently mix all ingredients together.
  5. Add the Greek salad dressing and mix until everything is coated. Serve immediately.
