The salad

The dressing

Instructions
- Whisk together olive oil and lemon juice in a small bowl, then add mint and stir to combine.
- Set the dressing aside until ready to use, and refrigerate overnight if desired.
- In a large bowl, combine the diced tomatoes, cucumber, red onion, Kalamata olives, and Feta cheese.
- Pour the dressing over the mixed vegetables and toss to combine, seasoning with salt and pepper if desired.
- Serve immediately.
