Ingredients

The salad

  • ½ cup tomatoes, diced
  • ½ cup cucumber, diced
  • ½ cup red onion, diced
  • ½ cup Kalamata olives, halved
  • ½ cup Feta cheese

The dressing

  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2-3 tablespoons fresh mint, chopped
  • to taste salt and pepper

Instructions

  1. Whisk together olive oil and lemon juice in a small bowl, then add mint and stir to combine.
  2. Set the dressing aside until ready to use, and refrigerate overnight if desired.
  3. In a large bowl, combine the diced tomatoes, cucumber, red onion, Kalamata olives, and Feta cheese.
  4. Pour the dressing over the mixed vegetables and toss to combine, seasoning with salt and pepper if desired.
  5. Serve immediately.
