Ingredients

Greek Salad Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried oregano
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground black pepper

Greek Salad Assembly

  • 1 whole cucumber, seeds removed and diced
  • 1 whole green bell pepper, seeds removed and diced
  • 2 cups cherry tomatoes, sliced
  • ½ whole red onion (~½ cup diced)
  • ¼ cup Kalamata olives, pitted and sliced
  • 3 tablespoons fresh dill, chopped
  • 3 ounces feta cheese, crumbled

Instructions

  1. Prepare the dressing by combining olive oil, vinegar, lemon juice, mustard, garlic, oregano, salt, and black pepper in a jar and shaking well.
  2. Slice the cucumber lengthwise and remove the seeds if desired, then dice it.
  3. In a large bowl, combine the diced cucumber, green bell pepper, sliced tomatoes, diced onion, sliced olives, and chopped dill.
  4. Pour the dressing over the mixed vegetables and toss well to combine.
  5. Sprinkle crumbled feta cheese on top and season with additional salt if needed, then serve immediately.
