Ingredients

The salad

  • 1 cucumber, cut into bite-size pieces
  • 1 red bell pepper, cut into small pieces
  • 1 yellow bell pepper, cut into small pieces
  • 1 cup cherry tomatoes, cut in half
  • ½ red onion, thinly sliced
  • ½ cup feta cheese, cubed

The vinaigrette

  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon Dijon mustard
  • ¼ cup red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ cup olive oil

Instructions

  1. Combine cucumber, red bell pepper, yellow bell pepper, cherry tomatoes, and red onion in a large mixing bowl.
  2. In a small bowl, whisk together minced garlic, dried oregano, Dijon mustard, red wine vinegar, salt, ground black pepper, and olive oil.
  3. Pour the vinaigrette over the vegetables and toss well.
  4. Top with feta cheese and let the salad sit for 10 minutes before serving.
