Ingredients

For the Greek salad dressing

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste freshly ground black pepper

For the salad

  • 1 large cucumber
  • 1 pint grape tomatoes or cherry tomatoes
  • 1 large green bell pepper
  • ½ small red onion
  • ¾ cup pitted Kalamata olives
  • 4 ounces feta cheese

Instructions

  1. Prepare the dressing by whisking together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, salt, and pepper in a small bowl.
  2. In a large bowl, combine the cucumber, tomatoes, green bell pepper, red onion, and olives.
  3. Drizzle the vinaigrette over the salad and toss to combine.
  4. Top with feta cheese and season with additional salt, pepper, and oregano as desired.
