Ingredients

The dressing

  • 3 Tbsp. extra-virgin olive oil
  • 3 Tbsp. red wine vinegar
  • 2 tsp. Dijon mustard
  • 1 tsp. dried oregano
  • to taste Kosher salt
  • to taste freshly ground pepper

The salad

  • 1 large cucumber, coarsely chopped
  • 1 medium green bell pepper, ribs and seeds removed, thinly sliced
  • 1 small red onion, thinly sliced
  • 12 oz. tomatoes, preferably a mix of sizes, halved, quartered, or sliced
  • cup Kalamata olives, pitted, torn
  • 6 oz. feta, cut into thin slabs

Instructions

  1. Whisk the dressing ingredients together in a large bowl until emulsified.
  2. Season the dressing with salt and pepper.
  3. Add the chopped cucumber, sliced bell pepper, sliced onion, and tomatoes to the dressing and toss to coat.
  4. Gently toss in the torn Kalamata olives and slabs of feta.
