Ingredients

  • 6 mini cucumbers, chopped
  • 2 cups grape tomatoes, cut in half
  • 1 cup feta cheese, diced
  • ½ cup kalamata olives, pitted and cut in half
  • 2 tbsp extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 tbsp dried oregano
  • ¾ tsp salt

Instructions

  1. Combine all ingredients in a large bowl and toss until well mixed.
  2. Serve immediately or refrigerate for about an hour to enhance flavors.
  3. Best consumed on the day it is made.
