Cashew Crunch Salad With Sesame Dressing

Instructions
- Wash and dry the kale, then chop the leaves off the stems and into small pieces. Add 1 tsp of salt to the kale and massage it well. Set aside.
- Whisk together all dressing ingredients in the order listed and set aside.
- To the kale, add sliced onion, red pepper, carrots, and scallions. Then, add diced avocado, cashews, and sesame seeds.
- Pour the dressing over the salad and toss until well combined. Optionally, top with more cashew pieces and sesame seeds.
