Radish Jicama Salad with Lemon Cumin Vinaigrette

Ingredients

The salad

  • 10 medium radishes
  • 1 large jicama
  • 2 cups chopped kale
  • ¼ cup fresh, chopped cilantro

The vinaigrette

  • 1 lemon juiced
  • 2 tablespoons extra virgin olive oil
  • 1 small clove garlic
  • ½ teaspoon cumin seeds
  • 1 pinch sea salt
  • 1 pinch freshly ground black pepper

Instructions

  1. Thinly slice the radishes and place them in a large salad bowl.
  2. Peel the jicama and slice it into small matchstick strips; add to the salad bowl.
  3. Add the chopped kale and cilantro to the salad bowl and toss together.
  4. In a small dish, whisk together the lemon juice, olive oil, minced garlic, cumin seeds, salt, and black pepper.
  5. Drizzle the vinaigrette over the salad mixture and toss to combine. Chill until serving.
