Ingredients

The salad

  • 2 bunches radishes
  • 4 units Persian cucumbers
  • 1 small bulb fennel
  • 1 clove crushed garlic
  • 2 tablespoons fresh chopped dill

The dressing

  • 3 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Thinly slice the radishes and cucumbers and place them in a large bowl.
  2. Trim the fennel, remove the core, and slice it into thin strips. Add to the bowl.
  3. In a separate bowl, combine garlic, lemon juice, olive oil, salt, and pepper. Whisk to make the dressing.
  4. Drizzle the dressing over the salad and toss gently.
  5. Sprinkle fresh dill on top, adjust seasonings if needed, and serve.
