Ingredients

The salad

  • 1 cup jicama, grated
  • 1 cup carrots, grated
  • 1 cup beets, grated

The dressing

  • 2 tablespoons orange juice, freshly squeezed
  • 1 tablespoon lime juice, freshly squeezed
  • ¼ cup olive oil
  • ¼ teaspoon celtic sea salt

Instructions

  1. Combine jicama, carrots, and beets in a large bowl.
  2. In a glass jar, mix orange juice, lime juice, olive oil, and salt; shake well.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately.
