Grilled Sweet Potato and Vegetable Sandwiches

Ingredients

Herb Yogurt Sauce

  • 1 cup Greek Yogurt
  • 1 clove garlic
  • 2 tablespoons fresh basil leaves
  • 1 tablespoon fresh cilantro leaves
  • 1 tablespoon fresh parsley leaves
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Sandwiches

  • 2 medium sweet potatoes
  • lbs sweet potatoes (about 1½ lbs)
  • 2 small-medium zucchini
  • 1 red bell pepper
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 8 slices sandwich rolls

Instructions

  1. Prepare the herb yogurt sauce by blending all sauce ingredients in a food processor until smooth and refrigerate.
  2. Cut sweet potatoes into wedges and boil them for about 5 minutes until tender but firm.
  3. Slice zucchini into spears and the red pepper into strips.
  4. Preheat the grill to medium-high heat.
  5. Toss the vegetables with olive oil, salt, and pepper, then grill them for 2-3 minutes on each side.
  6. Warm the sandwich rolls on the grill for about 1 minute.
  7. Assemble the sandwiches by spreading the herb yogurt sauce on the rolls and adding the grilled vegetables.
