Instructions
- Prepare the herb yogurt sauce by blending all sauce ingredients in a food processor until smooth and refrigerate.
- Cut sweet potatoes into wedges and boil them for about 5 minutes until tender but firm.
- Slice zucchini into spears and the red pepper into strips.
- Preheat the grill to medium-high heat.
- Toss the vegetables with olive oil, salt, and pepper, then grill them for 2-3 minutes on each side.
- Warm the sandwich rolls on the grill for about 1 minute.
- Assemble the sandwiches by spreading the herb yogurt sauce on the rolls and adding the grilled vegetables.
