Grilled Sweet Potatoes

The sweet potatoes

sweet potatoes, sliced into thin rounds

The crema
-

Greek yogurt (2%)

cup
cilantro leaves, chopped

¼
cup
green onions, chopped

fresh lime juice

Instructions
- Preheat the grill to medium-high for about ten minutes and spray the grates with high heat cooking spray.
- Thinly slice the sweet potatoes to less than ¼ inch and place them in a large bowl with the other ingredients. Toss to combine.
- Place the sweet potatoes on the grill in an even layer. Grill for 3-4 minutes, then quarter turn to achieve grill marks. Cook for another 3 minutes, flip, and cook until softened.
- To make the crema, combine all the crema ingredients in a blender and blend until smooth.
- Garnish the grilled sweet potatoes with green onions and cilantro, and serve with the crema for dipping.
