Instructions
- Prepare the chili lime tahini sauce by whisking tahini, adobo sauce, lime juice, and salt in a bowl, then add ice water and whisk until fluid.
- Slice the sweet potatoes into ½ inch thick slices and boil them in water until tender, about 4 minutes.
- Drain the sweet potatoes and let them dry. Preheat the grill to high.
- Arrange the sweet potato slices on a baking sheet, spray with oil, and season with salt and pepper on both sides.
- Grill the sweet potatoes for about 4 minutes on each side until char marks appear.
- Transfer the grilled sweet potatoes to a serving platter, drizzle with the chili lime tahini sauce, and garnish as desired.
