Ingredients

Chili Lime Tahini Sauce

  • ¼ cup tahini
  • 1 tablespoon adobo sauce
  • 2 teaspoons lime juice
  • to taste none sea salt
  • ¼ cup ice water

Grilled Sweet Potatoes

  • 2 lbs sweet potatoes
  • 1 none oil spray
  • to taste none sea salt
  • to taste none ground black pepper
  • to taste none garnishes (chopped herbs, sliced fresh chiles, chopped toasted nuts/seeds)

Instructions

  1. Prepare the chili lime tahini sauce by whisking tahini, adobo sauce, lime juice, and salt in a bowl, then add ice water and whisk until fluid.
  2. Slice the sweet potatoes into ½ inch thick slices and boil them in water until tender, about 4 minutes.
  3. Drain the sweet potatoes and let them dry. Preheat the grill to high.
  4. Arrange the sweet potato slices on a baking sheet, spray with oil, and season with salt and pepper on both sides.
  5. Grill the sweet potatoes for about 4 minutes on each side until char marks appear.
  6. Transfer the grilled sweet potatoes to a serving platter, drizzle with the chili lime tahini sauce, and garnish as desired.
