Instructions
- Prepare a large pot with water and bring it to a simmer.
- Steam the sweet potato wedges for 5-7 minutes until just tender.
- Transfer the sweet potatoes to a container and coat them with olive oil, lime zest, lime juice, cumin, chipotle, chili flakes, salt, and pepper.
- For the cherry salsa, chop the cherries and mix them with green onions, grated ginger, lime zest, lime juice, and black pepper.
- Preheat the grill to medium-high and grill the sweet potato wedges for about 2-3 minutes on each side.
- Serve the grilled sweet potatoes topped with cherry salsa and a sprinkle of chopped pecans.
- For the quinoa salad variation, cook quinoa and mix it with the grilled sweet potatoes, cherry salsa, olive oil, lime juice, green onions, pecans, salt, and pepper.
