Ingredients

The sweet potatoes

  • 2 medium sweet potatoes
  • 1 ½ tablespoons olive oil
  • 1 unit lime (zest and juice)
  • 1 teaspoon ground cumin
  • ½ teaspoon ground chipotle powder
  • a pinch unit chili flakes
  • to taste unit sea salt
  • to taste unit ground black pepper

The cherry salsa

  • 1 cup sweet cherries
  • 2 unit green onions
  • 1 inch piece fresh ginger
  • 1 unit lime (zest and juice)
  • to taste unit black pepper

To serve

  • a handful unit pecans (chopped)

Quinoa salad variation

  • ½ cup quinoa
  • 2 tablespoons olive oil
  • 1 unit lime (juice)
  • 2 unit green onions
  • a handful unit pecans (chopped)
  • to taste unit sea salt
  • to taste unit ground black pepper

Instructions

  1. Prepare a large pot with water and bring it to a simmer.
  2. Steam the sweet potato wedges for 5-7 minutes until just tender.
  3. Transfer the sweet potatoes to a container and coat them with olive oil, lime zest, lime juice, cumin, chipotle, chili flakes, salt, and pepper.
  4. For the cherry salsa, chop the cherries and mix them with green onions, grated ginger, lime zest, lime juice, and black pepper.
  5. Preheat the grill to medium-high and grill the sweet potato wedges for about 2-3 minutes on each side.
  6. Serve the grilled sweet potatoes topped with cherry salsa and a sprinkle of chopped pecans.
  7. For the quinoa salad variation, cook quinoa and mix it with the grilled sweet potatoes, cherry salsa, olive oil, lime juice, green onions, pecans, salt, and pepper.
