Grilled Sweet Potato Fries

Ingredients

The sweet potatoes

  • 4 large sweet potatoes

The seasoning

  • 2 tablespoons kosher salt
  • 1 teaspoon kosher salt
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon ground chipotle chile pepper
  • optional chopped fresh cilantro

Instructions

  1. Boil the whole sweet potatoes in a pot of cold water with 2 tablespoons of salt until tender but firm, about 10 to 15 minutes.
  2. Drain the potatoes and let them cool slightly.
  3. Preheat the grill to medium heat (about 400°F).
  4. Slice each potato in half lengthwise, then cut each half into 4 to 6 wedges, peeling off the skins as you go.
  5. In a bowl, toss the wedges with olive oil, brown sugar, chipotle chile pepper, and the remaining salt.
  6. Grill the wedges for about 6 minutes total, turning until lightly golden brown and tender.
  7. Serve hot, sprinkled with cilantro if desired.
