Grilled Sweet Potato Fries

Instructions
- Boil the whole sweet potatoes in a pot of cold water with 2 tablespoons of salt until tender but firm, about 10 to 15 minutes.
- Drain the potatoes and let them cool slightly.
- Preheat the grill to medium heat (about 400°F).
- Slice each potato in half lengthwise, then cut each half into 4 to 6 wedges, peeling off the skins as you go.
- In a bowl, toss the wedges with olive oil, brown sugar, chipotle chile pepper, and the remaining salt.
- Grill the wedges for about 6 minutes total, turning until lightly golden brown and tender.
- Serve hot, sprinkled with cilantro if desired.
