Nuoc Cham Dressing

Instructions
- Make the Nuoc Cham dressing by stirring all ingredients together in a small bowl.
- Assemble the wraps by arranging the lettuce leaves on a plate or platter.
- Divide the veggies among the lettuce leaves and fill with chicken or baked tofu.
- Add a slice of avocado, scallions, torn mint leaves, and peanuts.
- Serve immediately with the Nuoc Cham dressing.
