Ingredients

The dough

  • 2.5 cups almond flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1 tsp ginger
  • ¼ tsp nutmeg
  • ¼ tsp cloves
  • ¼ cup molasses
  • ½ cup coconut sugar
  • 1 large egg
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla

For homemade icing

  • 1 cup powdered sugar
  • 1-2 tbsp water

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the dry ingredients (almond flour, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and coconut sugar) in a medium bowl.
  3. In a separate bowl, combine the wet ingredients (egg, molasses, melted coconut oil, and vanilla).
  4. Add the dry ingredients to the wet ingredients and stir until combined.
  5. Chill the dough in the fridge for at least 1 hour.
  6. Roll the dough to ¼ inch thick and cut out shapes with cookie cutters.
  7. Bake for 11-13 minutes, then allow to cool completely before decorating.
