The icing
-

powdered sugar

Instructions
- Cream together the coconut sugar, butter, molasses, and vanilla extract in a stand mixer.
- Add the egg and mix until combined.
- In a separate bowl, whisk together all the dry ingredients.
- Gradually add the dry ingredients to the wet ingredients and mix until well combined.
- Cover the dough and refrigerate for at least 3 hours until firm.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Roll out the chilled dough to about ¼-inch thick using plastic wrap or a floured surface.
- Cut out shapes with cookie cutters and place them on the baking sheet.
- Bake for 8-10 minutes and allow to cool completely before icing.
- To make the icing, whisk together powdered sugar and water until smooth.
- Transfer the icing to a bag and cut a small hole to decorate the cookies.
