Ingredients

The cookies

  • ½ cup coconut sugar (or regular cane sugar)
  • ½ cup butter, room temperature
  • ½ cup blackstrap molasses
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 2 ¼ cups gluten-free flour
  • 1 teaspoon cinnamon
  • 2 teaspoons ground ginger
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon baking soda
  • ½ teaspoon salt

The icing

  • 1 cup powdered sugar
  • 1-2 tablespoons water

Instructions

  1. Cream together the coconut sugar, butter, molasses, and vanilla extract in a stand mixer.
  2. Add the egg and mix until combined.
  3. In a separate bowl, whisk together all the dry ingredients.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  5. Cover the dough and refrigerate for at least 3 hours until firm.
  6. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  7. Roll out the chilled dough to about ¼-inch thick using plastic wrap or a floured surface.
  8. Cut out shapes with cookie cutters and place them on the baking sheet.
  9. Bake for 8-10 minutes and allow to cool completely before icing.
  10. To make the icing, whisk together powdered sugar and water until smooth.
  11. Transfer the icing to a bag and cut a small hole to decorate the cookies.
