Apple Quinoa Breakfast Bowl

Instructions
- Shred two apples using a box grater or food processor.
- In a medium saucepan, bring quinoa and almond milk to a simmer, stirring often.
- Stir in the grated apples, applesauce, brown sugar, vanilla, cinnamon, and sea salt, then return to a simmer.
- Cover and cook on low for 25 minutes.
- Chop the remaining two apples and stir them into the mixture.
- Re-cover and cook for an additional 5 to 10 minutes.
- Remove from heat and let sit covered for 5 more minutes.
- Divide the mixture among four serving bowls and top each with chopped pecans and a drizzle of maple syrup if desired. Serve warm.
