Ingredients

The base

  • 1 cup quinoa, rinsed
  • 1 ¼ cups almond milk or milk of choice
  • ¼ cup applesauce
  • 3 tablespoons brown sugar or coconut palm sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon sea salt
  • 1 teaspoon vanilla extract

The toppings

  • ¼ cup chopped pecans
  • 2 pieces apples (chopped, for topping)
  • to taste none maple syrup (optional, for drizzling)

Instructions

  1. Shred two apples using a box grater or food processor.
  2. In a medium saucepan, bring quinoa and almond milk to a simmer, stirring often.
  3. Stir in the grated apples, applesauce, brown sugar, vanilla, cinnamon, and sea salt, then return to a simmer.
  4. Cover and cook on low for 25 minutes.
  5. Chop the remaining two apples and stir them into the mixture.
  6. Re-cover and cook for an additional 5 to 10 minutes.
  7. Remove from heat and let sit covered for 5 more minutes.
  8. Divide the mixture among four serving bowls and top each with chopped pecans and a drizzle of maple syrup if desired. Serve warm.
