Ingredients

Teriyaki Sauce

  • ½ cup coconut aminos
  • 2 dates, pitted and soaked
  • 1 tbsp arrowroot starch
  • tsp apple cider vinegar
  • 1 tsp fresh ginger, grated
  • 1 tsp garlic powder

Main Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 tbsp sesame oil
  • 2 small red bell peppers
  • 2 cups broccoli florets
  • 2 cups green beans
  • 6 pcs green onions
  • 6 cups cauliflower rice
  • 2 tbsp avocado oil
  • salt and pepper
  • sesame seeds (optional topping)

Instructions

  1. Blend all teriyaki sauce ingredients until smooth.
  2. Prepare the chicken and cauliflower rice.
  3. Heat sesame oil in a skillet and cook the chicken until done.
  4. While the chicken cooks, prepare the vegetables.
  5. Add the vegetables to the chicken and sauté until tender.
  6. In a separate pan, heat avocado oil and cook the cauliflower rice until tender.
  7. Add the teriyaki sauce to the chicken and vegetables, cooking until thickened.
  8. Serve the chicken and veggies over cauliflower rice, topping with sesame seeds if desired.
