Italian Braised Chicken

Ingredients

The chicken

  • 1 lb chicken thighs
  • to taste none salt
  • to taste none ground black pepper

The sauce

  • 14 oz whole peeled tomatoes
  • 2 tablespoons olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 10 leaves fresh Italian basil, chopped
  • 1 teaspoon brown sugar
  • 1 tablespoon Italian parsley, chopped for garnishing

Instructions

  1. Rinse and dry the chicken thighs, then season with salt and pepper.
  2. Puree the tomatoes in a food processor.
  3. Heat the braiser and brown the chicken thighs on both sides, then remove and reserve the juices.
  4. Sauté onion and garlic in olive oil until soft.
  5. Add the tomato puree and basil, mixing well.
  6. Return the chicken and its juices to the braiser, cover, and simmer on low heat for 15-20 minutes until tender.
  7. Stir in salt and brown sugar, garnish with parsley, and serve.
