Spinach Artichoke Dip in a Bread Bowl

Ingredients

The dip

  • 1 Tbsp. olive oil (extra virgin)
  • 2 Tbsp. shallots (finely chopped)
  • 1 Tbsp. fresh garlic (minced)
  • 1 cup marinated artichokes (rinsed, drained, and finely chopped)
  • 4 cups fresh spinach (chopped)
  • 3 Tbsp. whole milk
  • 4 oz. cream cheese
  • ¼ cup sour cream (full fat)
  • ¼ cup good mayonnaise
  • 4 Tbsp. grated romano cheese
  • ¼ tsp. freshly cracked black pepper
  • ½ tsp. hot sauce (optional)
  • to taste salt (optional)

The bread bowl

  • 1 small sourdough or round bread loaf

Instructions

  1. 1. Warm olive oil in a medium saucepan over medium heat, then add shallots and cook until soft.
  2. 2. Add garlic and cook until fragrant, then add artichokes and cook for 3 minutes.
  3. 3. Lower heat and add spinach, cooking until wilted.
  4. 4. Stir in milk, then add cream cheese, sour cream, and mayonnaise one by one, mixing well after each addition.
  5. 5. Add romano cheese, black pepper, and hot sauce if using, and stir to combine.
  6. 6. Turn on the oven to low broil.
  7. 7. Cut a large hole out of the center of the bread loaf to create a bowl.
  8. 8. Pour the dip into the bread bowl and broil for about 5 minutes until cheese is bubbly and browned.
  9. 9. Serve hot with the cut-out bread and other dipping options.
