Ingredients

  • 6 large eggs
  • 2 pieces Hanpen fish cake
  • 2 tbsp sugar
  • 1 tbsp honey
  • 1 tbsp mirin
  • 1 tbsp dashi
  • 1 tsp sake
  • 1 tsp usukuchi soy sauce

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. Cut the hanpen into small cubes and add it to a blender with the other ingredients.
  3. Blend the mixture for 30 seconds to 1 minute and let it settle.
  4. Pour the mixture into the prepared baking tray.
  5. Bake in the preheated oven for 20 minutes.
  6. Once baked, remove the omelette and carefully flip it onto a rolling mat.
  7. Score the omelette to make rolling easier and roll it into a cylinder shape.
  8. Secure the roll with rubber bands and let it cool slightly.
  9. Refrigerate the rolled omelette overnight before slicing and serving.
