Skillet Nachos

Ingredients

  • 1 bag tortilla chips
  • ½ can pinto beans
  • ½ can corn
  • ¾-1 cup vegan shredded Mexican cheese
  • 1 unit avocado
  • ½ cup salsa
  • ½ cup vegan queso
  • to taste unit sliced jalapeño pepper
  • to taste unit chopped cilantro
  • to taste unit cracked pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Line up the chips in a cast iron skillet or baking sheet.
  3. Evenly distribute the beans, corn, and shredded cheese over the chips.
  4. Bake for 5-7 minutes until the cheese is melted.
  5. Remove from the oven and top with jalapeño, salsa, vegan queso, cilantro, and pepper.
