Maple Bacon Breakfast Wraps

Ingredients

  • 2 slices center cut bacon
  • 1 large raw egg
  • 3 large raw egg whites
  • 2 tablespoons water
  • 1 cup fresh spinach
  • 2 Flatout Light Original Flatbreads
  • 2 oz 50% reduced fat Sharp Cheddar cheese, shredded
  • 2 tablespoons sugar free pancake syrup

Instructions

  1. Cook the bacon as per package instructions and set aside to drain.
  2. In a bowl, beat the egg, egg whites, and water together, seasoning with salt and pepper.
  3. Mist a skillet with cooking spray and heat over medium. Add spinach and wilt it, then add the egg mixture.
  4. Scramble the eggs with the spinach until cooked and fluffy, then remove from heat.
  5. Lay the flatbreads on a surface, placing two bacon slices on each, followed by shredded cheddar and the egg mixture. Drizzle syrup on top.
  6. Fold the ends of the flatbreads over the filling, then roll them up tightly.
  7. Optionally, grill the wraps in a skillet until golden on both sides.
  8. Cut each wrap in half and serve.
