Instructions
- Mix all dry ingredients in a bowl.
- In another bowl, combine milk, egg whites, and pumpkin butter or canned pumpkin and mix until smooth.
- Combine the wet ingredients with the dry ingredients and mix until just combined.
- Heat a large skillet over medium heat and lightly coat with cooking spray.
- Pour ¼ cup of pancake batter onto the skillet and cook until bubbles form and edges set, then flip.
- Repeat with the remaining batter.
- Top each serving with 2 tbsp of pumpkin butter.
