Ingredients

The cake

  • 2 cups pitted Medjool dates

  • 1 ½ teaspoons pure vanilla extract
  • ½ cup dark chocolate or semi-sweet chocolate chips

The frosting

  • 1 ½ cups pitted Medjool dates
  • 1 cup boiling water
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon pure vanilla extract
  • 1 pinch coarse salt
  • ½ cup chopped walnuts
  • ½ cup unsweetened shredded coconut (optional)

Instructions

  1. Preheat the oven to 325°F and prepare a 9-inch round cake pan.
  2. Soak the dates in boiling water for 10-15 minutes.
  3. Whisk together flour, cocoa powder, baking powder, and salt in a bowl.
  4. Drain the dates and blend them into a chunky paste.
  5. In another bowl, beat together oil, applesauce, sugar, and eggs until fluffy.
  6. Mix in the date paste, milk, and vanilla extract.
  7. Gradually add the flour mixture to the wet ingredients until combined.
  8. Fold in the chocolate chips and transfer the batter to the cake pan.
  9. Bake for 35-50 minutes until a toothpick comes out clean, then cool on a wire rack.
  10. For the frosting, soak the dates in boiling water for 10-15 minutes.
  11. Blend the soaked dates until smooth, then mix in cocoa powder, vanilla, and salt.
  12. Fold in walnuts and coconut, then refrigerate until the cake cools.
  13. Spread the frosting on the cooled cake and cut into slices.
