Ingredients

The cookie base

  • 1 ¾ cup all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup vegan butter
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 4 tablespoons dairy-free milk
  • 1 teaspoon vanilla extract

Flavor variations

  • ½ cup vegan chocolate chips
  • ¼ cup vegan chocolate chunks
  • ½ cup vegan candy buttons
  • ¼ cup raisins
  • 2 tablespoons rolled oats
  • ¼ cup chopped pecans or walnuts
  • 2 tablespoons coconut flakes
  • ¼ cup vegan white chocolate chips
  • ¼ cup dried cranberries

Instructions

  1. Mix the flour, baking soda, and salt in a small bowl.
  2. Cream the vegan butter, brown sugar, and white sugar until smooth.
  3. Add the milk and vanilla extract, mixing until combined.
  4. Gently fold in the dry ingredients until just combined, then fold in any mix-ins.
  5. Cover the bowl and refrigerate the dough for an hour.
  6. Preheat the oven to 180C/350F and line two baking sheets with parchment paper.
  7. Scoop out 16 cookie dough balls and place them on the baking sheets, spaced apart.
  8. Bake the cookies for 10-12 minutes until the edges are cooked.
  9. Let the cookies cool for 5 minutes before serving.
