Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 cup vegan butter, softened
  • 1 large egg, lightly beaten
  • ½ teaspoon vanilla extract
  • 1 cup white sugar
  • cup white sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, combine the flour, baking soda, baking powder, and sea salt.
  3. Add the softened vegan butter, beaten egg, vanilla extract, and 1 cup of sugar to the dry ingredients and mix until a dough forms.
  4. Form the dough into 24 balls, roll each in the extra sugar, and flatten slightly before placing on the baking sheets.
  5. Bake for 8 to 10 minutes until the edges are golden brown.
  6. Let the cookies cool for a few minutes before serving.
